Itality's Story

Tina, who is from Jemez Pueblo, is the owner of Itality, a restaurant that serves whole plant-based Pueblo food, based in Albuquerque, NM.​

Tina’s road to Itality began 20 years ago when she started selling her own burritos in Jemez. At this time, Tina’s worldviews shaped her insight and philosophy, encouraging her to convert to a plant-based diet. A vegan lifestyle, however, was difficult to maintain in Jemez. Most Pueblos are food deserts, meaning that residents have limited access to affordable and healthy food options due to the lack of nearby grocery stores. Tina began making her own food as a way to bring healthy, plant-based eating back to the Pueblo community.

 

In creating Itality, Tina also took inspiration from the Ital philosophy. Ital is a Rasta way of being and involves eating natural and unprocessed food. By bringing the Ital movement into Itality, Tina hopes to help people, especially in Pueblo communities, live healthier lifestyles while treating the Earth with compassion and respect.
